Foil-Wrapped Salmon with Garlic and Lemon Butter

Instructions

Fire up your grill or preheat oven to 400°F.

Season salmon pieces with salt and pepper. In a small bowl, combine butter, sugar, lemon juice, garlic and herbs. Cut 4 pieces of foil, roughly 12-inches square. Place a small amount of oil on side of foil and place salmon filet on foil. Top with butter mixture and one slice of lemon. Wrap the ends of the foil to form a spiral shape and fold the sides of the foil over the fish, covering completely; seal the packets closed.

Place the foil packet inside the grill or on a large, heavy baking sheet if you are baking in the oven. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Grill or bake until the salmon is just cooked through, 20-25 minutes. Using a large metal spatula, transfer the foil packets to plates and serve.

  • 11/2 pounds salmon, cut into 4-5 ounce pieces
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1 tablespoon lemon juice
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 4 slices lemon, seeds removed
  • Salt and pepper to taste
