Blueberry Balsamic Glazed Salmon

Instructions

Make the Blueberry Balsamic Glaze

  1. Combine the blueberries, blueberry jam, and balsamic vinegar in a small saucepan.
  2. Bring the mixture to a boil over medium heat.
  3. Reduce the heat to low.
  4. Cook for 10 minutes, stirring occasionally.
  5. Remove from heat and set aside.

Prepare and Grill the Salmon

  1. Preheat a grill to medium-high heat.
  2. Lightly coat the California King Salmon fillets with olive or vegetable oil.
  3. Season with salt and pepper.
  4. Oil the grill grates.
  5. Place the salmon on the grill.
  6. Cook for 3 to 6 minutes per side, or until the salmon flakes easily with a fork.
  7. Remove the salmon from the grill.

Assemble and Serve

  1. Transfer the grilled salmon to serving plates.
  2. Spoon the blueberry balsamic glaze over the salmon.
  3. Sprinkle with fresh basil, if desired.
  4. Serve immediately.

Additional Tips

The blueberry balsamic glaze can be prepared several days ahead and stored in a covered container in the refrigerator.

Serve any leftover blueberry balsamic glaze over a wedge of brie with toasted baguette slices, grilled chicken, or pork for an easy appetizer or meal enhancement.

  • 1/3 cup blueberry jam
  • 3 tablespoons balsamic vinegar
  • 4 California King Salmon filets (about 6 oz. each)
  • Olive or vegetable oil
  • Salt and pepper to taste
  • Snipped fresh basil
