Grilled Salmon Caesar Salad

Grilled Salmon Caesar Salad with charred romaine, avocado, tomatoes, Parmesan cheese, croutons, and California King Salmon.

Instructions

Grill the Salmon

  1. Preheat a grill to medium-high heat.
  2. Coat the top of the California King Salmon fillets with a light layer of oil.
  3. Oil the grill grates.
  4. Grill the salmon for 3 to 6 minutes per side or until it flakes easily with a fork.
  5. Remove from the grill and allow it to cool.
  6. Break the salmon into chunks once cool enough to handle.
  7. Refrigerate if preparing ahead of time.

Preparation of Romaine

  1. Cut each romaine heart in half lengthwise.
  2. Brush the cut sides and leaves lightly with Caesar dressing.
  3. Place the romaine on the grill cut-side down.
  4. Grill for about 2 minutes until lightly charred.
  5. Remove from the grill.
  6. Transfer to serving plates or a serving platter.

Assemble the Grilled Salmon Caesar Salad

  1. Sprinkle with avocado, tomato, cheese and croutons
  2. Top with grilled salmon chunks
  3. Serve immediately with additional dressing

Ingredients

  • 1 lb. California King salmon fillets
  • oil
  • Salt and pepper
  • 1 (18-oz.) pkg. romaine hearts
  • Caesar salad dressing, plus additional for serving
  • Firm but ripe avocado cubes
  • Diced tomato
  • Freshly shredded or grated Parmesan cheese
  • Croutons
